COMPANY FISH CASSEROLE A LA
CAMPOLI
 
1 stick unsalted butter
4 tbsp. flour
1/4 c. shallots, chopped
1/4 tsp. garlic, powdered
1/2 tsp. thyme
1/2 tsp. marjoram
1/2 tsp. oregano
1 pt. heavy cream
1 pt. milk
2 egg yolks, mixed together

SUGGESTIONS:

1 c. lobster
1 c. imitation crab
1 can clams
1 lb. langustino
1 lb. scallops
1/4 tsp. grated nutmeg
Flavored bread crumbs

Simmer 1 to 2 minutes, stirring, first 7 ingredients. Add 1 pint heavy cream and 1 pint milk plus egg yolks and nutmeg. Bring to a boil slowly. Add fish at the end (see suggestions above - all can be used if desired). Divide in small individual cups or casserole. Cover with flavored bread crumbs; dot with butter and bake in 350 degree oven until bubbly.
