UPTOWN HAMBURGER 
2 lbs. tomatoes (4 lg.)
2 cloves garlic
2 tbsp. oil
Salt and pepper
1 tbsp. butter
1 tbsp. chopped parsley
1 lb. ground beef
1/2 loaf French bread

Peel, seed and chop tomatoes. Mince garlic. In a saucepan, heat 1 tablespoon of the oil over medium heat. Add garlic and stir 30 seconds. Add tomatoes and 3/4 teaspoon salt. Cook uncovered, over low heat until soft, about 30 minutes. Remove from heat and stir in butter and parsley.

Heat broiler or grill. Shape meat into 4 patties about 1 inch thick. Cut 4 1/2 inches thick diagonal slices of bread and brush both sides with the remaining 1 tablespoon oil. Broil or grill bread until golden, about 30 seconds on each side. Broil or grill the hamburgers, 5 to 10 minutes for medium rare. Sprinkle with salt and pepper. Top each slice of bread with a hamburger and some sauce.
