PIEROGI 
2 c. flour
2 eggs
1/2 tsp. salt
butter
Warm water

FILLING:

1 c. mashed potatoes
1/4 lb. American cheese, grated, add to taste

Mix flour, egg and salt. Add enough water to make medium soft dough. (Don't get worried if it is sticky, just flour your hands and keep kneading it until you can roll it out nicely. Divide it in half. Roll out one portion at a time. Cut into two-inch squares. Place 1/2 teaspoon of mashed potatoes and cheese mixture, fold in triangle and pinch good. Drop in boiling water until it comes to the top (about 10 minutes). Drain them and pour melted butter on them.
