TOMATO - BROCCOLI CHICKEN 
2 whole med. chicken breasts, skinned, boned & halved lengthwise
1/4 c. chopped onion
2 tbsp. butter
1 (10 oz.) pkg. frozen cut broccoli, thawed (or 1 sm. bunch fresh)
1 tsp. lemon juice
3/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. thyme, dried, crushed
3 med. tomatoes, cut into wedges

Sprinkle chicken lightly with a little salt and pepper. Cut chicken into 1/2 inch wide strips. In medium skillet, cook chicken and onion in butter until chicken is no longer pink. Stir in broccoli, lemon juice, salt, thyme and pepper. Cover, simmer 6 minutes. Add tomatoes, simmer covered 3 to 4 minutes more. Serves 4. 244 calories a serving. Add mashed potato and rolls for a complete meal.
