SWEET POTATO CASSEROLE 
3 c. cooked mashed sweet potatoes
1/2 c. white sugar
2 eggs, beaten
1/2 stick melted butter
1/2 c. milk
1/2 tsp. salt
1 1/2 tsp. vanilla

1/2 c. brown sugar
1/3 c. flour
1 c. chopped pecans
1/3 c. melted butter

Mix potatoes, sugar, eggs, butter, milk, salt and vanilla. Put in 1 1/2 quart greased baking dish. Pour sugar mixture on top. Bake at 250 degrees for 35 minutes. Can be made ahead and frozen for later use.
