SWEET POTATO CASSEROLE 
1 1/2 c. mashed sweet potatoes
1 egg
2 tbsp. butter
1 tbsp. flour
1/4 c. milk
1/2 c. white sugar
1/4 tsp. salt
1/2 tsp. vanilla

Topping:

1/2 c. brown sugar
1/4 c. butter
1/2 c. pecans
1/4 c. flour

Cook and mash sweet potatoes. Add next 7 ingredients; mix and put in 1 1/2-quart baking dish.

In another bowl, combine topping ingredients. Sprinkle on sweet potato mixture.

Bake at 350°F for 1 hour. Double recipe for a 9 x 13-inch pan.
