WESTERN PIQUANT SAUCE 
2 1/2 qts. peeled, diced ripe tomatoes
1 c. finely chopped green pepper
1 1/2 c. onion, finely chopped
1 1/2 c. vinegar
1 1/2 c. sugar
2 tbsp. salt
Hot peppers to taste
1 tsp. cloves
1 tsp. cinnamon
1 tsp. allspice
1/2 tsp. nutmeg (optional)

Combine all the ingredients. Heat gradually to boiling point; simmer 1 hour or until desired consistency. Pour into jars; seal at once. Process in boiling water bath 5 minutes. Makes about 3 pints.
