PURE FRUIT COOKIES 
3 med. ripe bananas
1/3 c. sunflower oil
1 tsp. vanilla
1/8 tsp. salt
1 1/2 c. quick oats
1/2 c. oat brand (for hot cereal)
1 1/2 c. chopped dried fruit such as dates, raisins or apricots
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease 2 large cookie sheets. Mash bananas (about 1 1/2 cups). Stir oil, vanilla and salt. Add oats bran, fruits and nuts. Stir well. Drop by rounded teaspoon about 1 inch apart. Flatten slightly with back of spoon. Bake 20 to 25 minutes. Transfer to rack to cool. Store in refrigerator.
