FRIED ONION RINGS 
3 or 4 lg. onions
Oil for frying
2 eggs
1 tsp. salt
1 tbsp. peanut oil
1 c. flour
3 tbsp. cornmeal
3/4 c. milk

Peel onions and slice 1/4 inch thick. Separate into rings. Pour oil into a deep fryer to about 2 inches deep. While oil heats, beat eggs, salt and peanut oil together, then alternately add flour, cornmeal and milk. Beat to a smooth batter.

When oil is hot (not smoking) dip rings in batter one at a time. Fry only a few at a time.
