PORCUPINE BALLS 
1 lb. ground meat
3 slices day old French bread (or any bread)
1 egg, beaten
3/4 c. milk
1 sm. onion
2 stalks celery, chopped
1/2 to 1 c. cooked rice
1 tsp. salt
2 c. tomato juice or 1 (16 oz.) can tomato sauce

Crumble bread and soak in milk. Add beaten egg. Add cooked rice. Mix with other ingredients (except tomato juice). Shape into 8 balls and place in a greased roasting pan (12 x 17 inches). Pour tomato juice over the balls and bake 1 1/2 hours in a preheated oven of 350 degrees.

COMMENTS: Save leftover cooked rice to make this meal. Delicious leftover. Heat in microwave on HIGH (covered) for 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
