JOY'S TACO SALAD 
Salad:

head of leaf lettuce
fresh cilantro
fresh tomatoes, chopped
avocado, chopped
ground beef or chicken, cooked
can of black beans
can of corn (or 1 c. frozen corn, heated)
tortilla chips, crumbled
red or green onions, chopped
Cheddar cheese, shredded

Beef or chicken can be lightly sautéed with taco seasoning mix for flavor if desired. Meat, beans and corn should be warm. All other toppings should be cold.

Spread lettuce on plates. Serve all toppings in small bowls for picky eaters to mix and match. Tastes great with a glass of limeade!

Dressing:

salsa
safflower oil (or any oil)
Catalina salad dressing

In a small jar, mix about 1/2 part oil to 1/2 part salsa, with a squirt of Catalina dressing, depending on how chunky you want the dressing to be.
