SWEET POTATO CASSEROLE | |
3 c. mashed cooked sweet potatoes 1 c. white sugar 2 eggs, beaten 1 tsp. vanilla 1/2 c. butter, softened 1/3 c. milk Topping: 1 c. brown sugar 1/3 c. flour 1 c. chopped pecans 3 to 4 tbsp. butter Preheat oven to 350°F. Mix together potatoes, sugar, eggs, vanilla, butter and milk. Pour into buttered casserole dish. Mix topping ingredients together with a fork and place an even layer on top of the casserole. Cover with aluminum foil and bake for 25 to 30 minutes. Serve heated. Yield: 8 to 10 servings. |
