PUMPKIN PIE SQUARES | |
1 box yellow cake mix (reserving 1 cup for topping) 1/2 c. butter 1 egg FILLING: 3 c. or 1 lg. can pumpkin 2 eggs 2/3 c. milk 1/2 c. brown sugar 1/2 tsp. ginger 1/4 tsp. cloves 1 tsp. cinnamon TOPPING: 1 c. cake mix 1/4 c. sugar 1 tsp. cinnamon 1/4 c. butter Nuts (if desired), chopped Grease 9 x 13 inch cake pan. Mix cake mix, 1/2 cup butter, and egg. Press in cake pan. Combine ingredients for filling. Mix until smooth and pour on crust. Combine ingredients for topping. Sprinkle or crumble over filling. Add nuts, if desired. Bake at 350 degrees for 45 to 50 minutes until knife is inserted and comes out clean. |
