SWEET POTATO PIE IN ORANGE
SHELLS
 
6 to 10 oranges (depending in size)
1 lb. sweet potatoes (boiled, peeled and mashed)
8 tbsp. (1 stick) unsalted butter
2 tbsp. molasses
3 lg. eggs
1 c. milk
Grated zest (thin, colored part of peel) and juice of 1 lemon

Preheat oven to 350 degrees. Cut the top fourth off each orange, then hollow oranges with a grapefruit spoon or a melon baller. In a large bowl, blend the orange pulp with the potatoes, butter, eggs, milk, lemon zest and juice and molasses. Fill each orange shell with the mixture. Bake 20 minutes or until juice begins to run from oranges. Serves 6.
