DONNA'S BUFFET CHICKEN & RICE 
2 c. finely chopped broccoli
1 c. finely chopped carrots
1/2 c. finely chopped celery
2 med. onions, chopped fine
3 lbs. boiled chicken
2 tbsp. vegetable oil
2 lbs. cooked lg. grain rice
Soy sauce

Cut boiled chicken into chunks and set aside. Chill cooked rice for an hour or more. Use a Chinese wok (preferably electric) : heat vegetable oil until hot; stir in rice; add chicken and vegetables, stirring constantly. Shake in soy sauce until the rice turns brown as you continue to stir. Cover and set the wok on simmer until ready to serve. Serves approximately 30.
