DOLMATHES (STUFFED GRAPE LEAVES) | |
1 lb. ground beef 1 egg (beaten) 1 med. onion (chopped) 1/2 c. uncooked rice 1/4 c. chopped parsley 1 tsp. chopped mint leaves or 1/2 tsp. dried 2 tbsp. olive oil Water Salt and pepper Grape or cabbage leaves 1 1/2 c. undiluted canned beef broth 2 eggs (beaten) Juice of 1 lemon Mix beef and egg. Add chopped onion, rice, parsley, mint, oil and 1/4 cup water. Season with salt and pepper. Soak leaves in hot water 5 minutes. Place spoonful of meat mixture on a leaf, and roll. Folding ends in as you go to seal in mixture. Place folded side down in a saucepan, making more than one layer if necessary. Add broth and 1 1/2 cups water. Cover and simmer 45 minutes. For sauce beat 2 eggs, add warm lemon juice, slowly add some hot broth while beating. Stir egg mixture to remaining broth, cover and allow to stand 5 minutes, off the heat, to thicken. Pour over Dolmathes. Makes 6 servings. |
