POTATOES ANNA 
1/2 c. soft butter
2 lbs. (about 5 c.) Idaho potatoes, pared and thinly sliced
1 tsp. salt
1/8 tsp. pepper

Preheat oven to 425 degrees. With 3 tablespoons butter, grease 8 inch skillet with heat resistant handle and tight fitting cover.

Gently toss potatoes with salt and pepper. Layer a third of potato slices, circular fashion, around bottom and side of skillet. Dot with butter. Repeat twice.

Over high heat, cook potatoes 3 minutes. Then bake, covered, 30 minutes. Place sheet of foil under skillet to catch any overflow. Remove cover and broil until lightly brown. Let stand 5 minutes. Invert on serving platter. Makes 6 servings.

Easy, 4 ingredients and delicious. Made with regular potatoes that were on hand and it turned out fine. Didn't brown as much as I expected even with using a cast iron skillet. Maybe would have been browner with russet potatoes. Might keep on stovetop longer at a medium high heat to brown it up more. Would def make again (my husband loved it!)
