SPICY CATFISH AMANDINE 
1/4 c. butter, melted
3 tbsp. lemon juice
6 (6 oz.) catfish fillets
1 1/2 tsp. Creole seasoning (Astor Cajun Seasoning is good!)
1/2 c. sliced almonds

Combine butter and lemon juice; dip each fillet in butter mixture, and arrange in a 13x9x2 inch baking dish. Sprinkle fish with Creole or Cajun seasoning and almonds. Bake at 375 degrees for 25 to 30 minutes or until fish flakes easily when tested with a fork. Yield: 6 servings.
