REFRIGERATOR BUTTERSCOTCH
COOKIES
 
3 1/2 c. flour (sifted before measuring)
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt
1 c. shortening
2 c. brown sugar, firmly packed
3 eggs
1 tsp. vanilla
1 c. nuts

Sift flour with soda, cream of tartar and salt. Place shortening and sugar in mixing bowl, cream until light and fluffy. Add whole eggs and vanilla and beat. Add flour mixture and mix until blended. Then add nuts and mix only until nuts are mixed through dough. Bake on slightly greased cookie sheet in preheated 400 degree oven for 10 to 12 minutes depending on size of cookies. Remove cookies and cool on wire rack. Makes about 5 dozen small cookies. (Dough can be molded in cartons, chilled and sliced for baking or made in oblong rolls and chilled for baking as needed.)
