RED VELVET CAKE 
1 1/2 c. salad oil
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
1 oz. bottle red food coloring
2 c. flour (plain)
1 c. buttermilk

Mix oil and sugar thoroughly. Add eggs, 1 at a time. Next add coloring and vanilla. Now add dry ingredients, which have been sifted together alternately with buttermilk. Bake at 350 degrees in a 13 x 9 x 2 inch pan for 30 to 35 minutes.

CREAM CHEESE FROSTING FOR RED VELVET CAKE:

3 oz. pkg. cream cheese
1 tsp. vanilla
3 to 4 tbsp. milk
3 c. confectioners' sugar
1/2 c. butter
3/4 c. pecan pieces (opt.)

Soften cream cheese and cream together the remaining ingredients and spread on top of cake.
