CHEESY POTATO RICE SOUP 
Great served in bread bowls!

1 box UNCLE BEN'S® 23 herbs and spices rice mix, prepared
3 (10 oz. ea.) cans cream of potato soup
3 cans milk (use empty soup can)
3 tbsp. butter
1 small onion, chopped
1 lb. Velveeta Mexican cheese (mild or spicy), cubed (1/2 pkg.)
3 oz. pkg. real bacon bits
pepper, to taste

Prepare rice mix according to package directions.

In a soup pot, sauté onion in 3 tablespoons butter until tender, then add the 3 cans of soup and milk. Over low heat, add the cubed Velveeta cheese, stirring continually until cheese is melted and soup has thickened. Stir in prepared rice and bacon bits and serve.
