SWEDISH MEATBALLS | |
1 1/2 lbs. lean ground beef 1/2 lb. ground veal 1/2 lb. ground lean pork 1 c. fine dry bread crumbs 2/3 c. milk 1/2 c. finely chopped onions 3/4 tsp. nutmeg 2 tsp. salt 1/2 tsp. pepper 2 eggs, separated 2 (10 oz.) cans consomme 6 tbsp. flour 1/2 c. water 2 c. sour cream 1/3 c. chopped parsley 3 tsp. Worcestershire sauce Mix together meat, crumbs, milk, onion, nutmeg, salt and pepper. Beat egg whites until stiff but not dry. Beat egg yolks slightly and add to meat mixture. Fold in beaten egg whites. Gently form into one inch balls. Pour consomme into a large saucepan. Add meatballs, cover and simmer over low heat 30 minutes. Remove meatballs, keep warm. |
