SWEET POTATO PIE 
2 lg. peeled, cooked, mashed sweet potatoes = 1 1/2 c. or 1 (18 oz.) can
sweet potatoes
3/4 c. milk
2 slightly beaten eggs
1 tbsp. butter, melted
1/2 c. brown sugar
Pastry for 1-crust pie
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. ground nutmeg

Combine sweet potatoes, brown sugar, salt and spices in bowl. Mix together milk, eggs and butter. Add to potato mixture and blend well. Pour into pie shell. Bake at 400 degrees 40-45 minutes or until knife inserted halfway between center and edge of filling comes out clean.
