GAZPACHO 
4 c. cold tomato juice
1 sm. well minced onion
2 c. fresh diced tomatoes
1 c. minced green pepper
1 tsp. honey
1 clove garlic, minced
2 tbsp. wine vinegar
1 tsp. each tarragon and basil
Dash of cumin
2 tbsp. olive oil
Salt and pepper to taste
1 diced cucumber
2 scallions, chopped
Good squirt of lemon juice
1/4 c. fresh chopped parsley
Dash of Tabasco

Combine all. Chill at least 2 hours (overnight is best). Then cook.
