TURKEY HASH 
3 tbsp. butter
1 tbsp. grated onion
2 tbsp. flour
1 c. chicken stock or canned consomme
1 c. light cream
2 1/2 c. diced turkey
1/4 tsp. pepper
1/8 tsp. nutmeg

Melt butter in saucepan. Saute the onions for 5 minutes. Stir in flour. Gradually add the stock and cream, stirring constantly until sauce reaches boiling point. Add turkey, pepper and nutmeg; cook slowly for 10 minutes. Serve over waffles or toast. Serves 6.
