FRIED RICE AND CABBAGE 
1/2 onion
5 garlic cloves
1/2 tsp. ginger
6 tbsp. olive oil
4 c. cooked rice
1/2 head medium cabbage
4 carrots
black pepper
crushed red pepper

In a large non-stick frying pan, fry onion, garlic and ginger in 2 tablespoons olive oil. Add black pepper and crushed red pepper, to taste. Add remaining oil and begin to add rice. Stir rice in and sure it gets fried a little as you go. Once the rice is in add carrots and cabbage. Serve with spam or corned beef. Season with soy sauce, if desired.
