ENCHILADA CASSEROLE 
1 lb. ground chuck
1 chopped onion
1 can refried beans
1 can cream of chicken soup
1 lb. mild Cheddar cheese
1 pkg. corn tortillas (frozen)
1 can enchilada sauce

Brown meat and onions, then drain. Mix in beans, 1/2 cup grated cheese, cream of chicken soup and 1/2 can enchilada sauce; mix well.

Grease a casserole dish with oil or non-stick spray. Alternate layers of tortillas, meat mixture, cheese and enchilada sauce ending with cheese and sauce on top. Bake at 350 degrees for 35 minutes. Let cool about 10 minutes before serving.
