GERMAN POTATO SALAD 
1 1/2 lbs. Russet potatoes
1/3 c. vegetable oil
1/3 c. cider vinegar
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. dry mustard
1/8 tsp. pepper
4 slices bacon, crisp, crumbled
2 tbsp. chives or green onions
Chives or chive blossom for garnish

Cook potatoes covered in one inch of salted water 20-30 minutes until tender. Drain, peel and slice 1/4 inch thick.
