MEXICAN LASAGNA 
1 1/2 lb. ground beef, browned and drained
1 tbsp. chili pepper
1/4 tbsp. red pepper
1 can diced Mexican-style tomatoes
2 c. small curd cottage cheese
1 egg
1 1/2 tsp. ground cumin
1/4 tsp. garlic powder
1 tsp. salt
10-12 tortillas
1 c. mexican cheese

Put together beef, spices, and tomatoes. Heat through. Cover bottom and sides with tortillas in 9x13 pan. Spread meat inside; top with tortillas. Mix cottage cheese, mexican cheese, and egg. Pour over tortillas.

Bake at 350°F for 30 minutes. Remove from oven. Serve with salsa, sour cream, lettuce, tomatoes and onions.
