BROCCOLI AND CARROTS AU GRATIN 
5-6 carrots, cooked
1 pkg. frozen broccoli spears, partially cooked

WHITE SAUCE:

2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1 c. milk
3/4 - 1 c. grated cheese

Melt butter in saucepan over low heat. Blend in flour and salt. Add milk all at once. Cook quickly, stirring constantly until mixture thickens and bubbles. Add cheese to white sauce. (I use Velveeta.) Place broccoli and carrots in casserole. Pour cheese sauce over vegetables and top with buttered bread crumbs or onion rings. Bake at 350 degrees for 20 to 25 minutes.
