MUSHROOM SPINACH SALAD 
Salad:

4 to 6 c. torn fresh spinach
1 c. sliced fresh mushrooms
1 (8 oz.) can sliced water chestnuts, drained
1/4 c. bacon bits
2 green onions

Place salad ingredients in a large bowl.

Dressing:

6 tbsp. vegetable oil
2 tbsp. vinegar
2 tbsp. sugar
1 1/2 tsp. dry mustard
1/2 tsp. celery seed
1/4 tsp. salt
Pepper to taste

In a jar with a tight fitting lid, combine all dressing ingredients and shake well. Pour over salad and toss. Serve immediately.

Serves 4.
