EDNA GRANT'S PINEAPPLE CREAM PIE 
1/2 c. sugar
1/8 tsp. salt
6 tbsp. flour
1 c. crushed pineapple (drained)
3 egg yolks (save whites for meringue)
3 tbsp. butter
1 1/4 c. milk
Juice of 1 lemon

Mix sugar, salt and flour; add pineapple and beaten egg yolks, butter and milk. Cook until thick. Cool. Pour into baked pie shell.

PIE SHELL:

1 1/2 c. flour
1/2 tsp. salt
1/2 c. Crisco
3 or 4 tbsp. water

Mix, roll out and fit into pie pan. Prick with fork on bottom. Bake at 350 degrees until brown.

MERINGUE:

3 egg whites
1/8 tsp. salt
6 tbsp. sugar

Have egg whites at room temperature. Add salt. Beat until light but not stiff. Add sugar, a tablespoon at a time, beating well between additions. Bake until light brown.
