SQUASH RELISH 
6 c. chopped squash
4 bell peppers, chopped
1 lg. jar pimentos
4 onions, chopped
3 tbsp. salt
2 c. vinegar
3 c. sugar
2 tsp. mustard seed

Put squash, peppers, pimentos and onions in large pan and cover with salt. Let set 1 hour. Drain and add vinegar, sugar and mustard seed. Cook 20 to 30 minutes. Put in clean jars and seal while hot. Chopped pears can be used for squash.
