CRACKED WHEAT PILAF 
1 c. bulgar (cracked wheat)
1/2 c. onion, chopped
6 tbsp. butter
2 c. beef or chicken stock, boiling
1/2 tsp. salt
1/4 tsp. freshly ground black pepper

Saute dry bulgar in 4 tablespoons butter, stirring until thoroughly coated. In the remaining butter, saute the onion separately until soft. Combine onion with bulgar and remaining ingredients in a casserole. Cover and bake 30 minutes in a 350 degree oven. Stir gently with a fork. Cover and bake again for additional 15 minutes or until all liquid absorbed.
