POTATO CROQUETTES 
2 c. mashed potatoes
1/2 tsp. salt
1/2 tsp. pepper
1 egg or 2 egg yolks
2 tbsp. butter
1 tsp. celery salt
1 c. bread crumbs
1/2 c. vegetable oil

Beat eggs with mashed potatoes. Add other seasoning ingredients. Milk may be needed if potatoes are too dry. Heat mixture in a saucepan, stirring continuously. When mixture leaves the sides of the pan, turn into a flat dish.

When cool, divide into croquettes shapes. Sprinkle with bread crumbs and fry in a heavy skillet.
