MANDARIN ORANGE CAKE 
1 pkg. yellow cake mix
3 eggs
3/4 c. oil
1 sm. can mandarin oranges, including juice
1 sm. pkg. vanilla instant pudding mix
1 (20 oz.) can crushed pineapple
1 tsp. vanilla
8 oz. Cool Whip

Put yellow cake mix, eggs, oil and mandarin oranges (including juice) into a bowl. Beat 3 minutes at medium speed. Pour into greased and floured 9x13 pan. Bake at 350 degrees for 30-35 minutes.

Prepare frosting: Mix pudding mix and pineapple together. Add vanilla; fold in Cool Whip. Frost cake when it is cool. Frosting can also be used as a base for fruit salad -- add grapes, bananas, apples, etc.
