HONEY AND MUSTARD DRESSING 
1 sm. onion
1/4 c. (plus 2 tsp.) light colored honey
1/4 c. granulated sugar
1/4 c. apple cider vinegar
1 tsp. Dijon mustard
1/2 tsp. salt
1 c. salad (not olive) oil
Poppy seeds (optional)

Make 1 tablespoon onion pulp by grating in food processor. Add honey, sugar, vinegar, mustard and salt. Process until blended. Blend 30 seconds. Slowly add oil, while continuing to process at high speed.

Transfer to container and add poppy seed (optional). Cover and refrigerate. May be made a day or two in advance. Serve over spinach and garnish with sliced mushrooms.
