VEGETABLE LIME RING 
1 (3 oz.) lime gelatin
3/4 c. boiling water
3/4 c. shredded unpared cucumber
1/4 c. finely sliced green onion
1 (8 oz.) carton (1 c.) cream-style Cottage cheese
1 c. mayonnaise
1 tsp. horseradish
1/4 tsp. salt

Dissolve gelatin in boiling water. Chill until partially set.

Combine remaining ingredients, fold into gelatin. Pour gelatin mixture into 3 1/2 cups ring mold. Chill until gelatin mixture is firm. Unmold and serve. Serves 5-6.
