Sirloin steaks Butter Shallots Worcestershire sauce Salt Pepper Parsley Put 4 sirloin steaks (about 6 oz. each) between piece of wax paper and pound to 1/3 inch thickness. Heat 2 tablespoons butter in small saucepan. Add 4 tablespoons finely chopped shallots and cook until lightly browned. Add 2 tablespoons Worcestershire sauce and heat to bubbling. Keep sauce hot. In 12 inch skillet, heat 6 tablespoons butter. When it begins to brown, add steaks and cook for 3 minutes. Turn and cook 2-3 minutes longer or until done to taste. Transfer to serving dish and sprinkle with salt and freshly ground pepper. Spread shallot sauce over steaks and sprinkle with parsley. Serve immediately. |
