LIME PIE 
2 eggs, beaten well
1 c. sugar
1 (12 oz.) pineapple juice
1 (3 oz.) pkg. Jello
1 lg. can evaporated milk
Cool Whip
Coconut
2 baked pie crust

Chill milk for 1 hour. Stir together eggs, sugar, and pineapple juice. Let boil 1 minute, stirring all the time. Add Jello. Add a few drops of green coloring. Cool. Whip chilled milk and fold in cool Jello mixture. Top with cream and coconut. Makes 2 pies.
