ELEGANT BAKED POTATOES 
6 Idaho baking potatoes
5 strips crisply fried bacon, crumbled
1 onion, minced
1/2 green pepper, chopped
1 (8 oz.) sour cream
1 c. grated sharp Cheddar cheese
Salt and pepper

After baking potatoes, pop open and scoop out of shells. Saute onion and green pepper in small amount of bacon drippings. Drain.

Whip potatoes with butter and cream. Fold in onions and peppers, bacon and sour cream. Add salt and pepper to taste. Top with cheese, stuff shells before topping with cheese. Bake at 300 degrees until cheese melts.
