MEATBALL STEW | |
4 c. cornflakes cereal, crushed to make 2 cups 2 egg whites 1/4 c. tomato sauce (may use the no salt brand) 1 tsp. ground cumin 1 lb. lean ground turkey 1 c. onion slices 1/2 c. green pepper, chopped 2 cans whole tomatoes (14 1/4 oz. each) 1 can garbanzo beans, drained 3 tbsp. chopped cilantro 1 1/2 c. water 1 tbsp. all purpose flour Vegetable cooking spray In a large mixing bowl, combine cereal, egg, tomato sauce, cumin and ground turkey. Mix until well combined. Using round measuring tablespoon shape into approximately 18 meatballs. In a 4 quart saucepan coated with cooking spray, brown meat balls over low heat. Add onion slices, green pepper, tomatoes, beans, cilantro and water. Cover, simmer for 25 minutes over low heat, stirring occasionally. Remove 1/3 cup hot liquid from meat mixture. Gradually add flour, mixing constantly until smooth. Stir into meatball mixture. Continue cooking 5 minutes or until mixture thickens. Serve hot. |
