DEVILED CHICKEN 
2 tbsp. tarragon or white vinegar
2 tbsp. non-fat or low-fat yogurt (plain)
1 tbsp. dijon style mustard
1 sm. onion, finely chopped
1 sm. apple, finely chopped
1/2 tsp. ground coriander
1/2 tsp. freshly grated ginger
1/8 tsp. white pepper
1 chicken, cut up with the skin removed
Chopped tomatoes and minced chive as a garnish

In a small bowl, combine all ingredients, except chicken and garnish. Use mixture as a marinate. Score chicken parts with a sharp knife. Place chicken in a shallow baking pan; pour marinade mixture over chicken. Cover and refrigerate overnight (or for 4 hours at room temperature). Remove chicken from marinade and place in a broiler pan. Broil until crisp and tender, basting with marinade. Garnish with chopped tomatoes and chives, if desired. Makes 4 servings.
