BROCCOLI CASSEROLE 
2 c. rice
2 c. chicken broth
1 onion, chopped
2 stalks celery, chopped
2 cans cream of mushroom soup
1 lb. Velveeta cheese, diced
2 boxes frozen broccoli
2 tsp. salt

Cook rice, onion and celery in chicken broth for 10 minutes (according to directions on rice box). In baking dish mix all ingredients and bake at 350 degrees for 30 minutes.
