NECTARINE OAT BRAN MUFFINS 
2 c. unsifted all-purpose flour
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
2 lg. eggs
1/2 c. light brown sugar, firmly packed
1/2 c. buttermilk
3 c. oat bran flake cereal
2 c. chopped, unpared nectarines (2 med.)

Preheat oven to 400 degrees. Line muffin pan cups with paper liners. On sheet of waxed paper combine flour, baking powder, cinnamon, baking soda and 1/4 teaspoon salt. In large bowl whisk eggs with sugar, buttermilk and 1/4 cup salad oil until blended. Add flour mixture, cereal and nectarines. Stir just until moistened. Evenly fill prepared muffin cups 2/3 full. Bake 20 minutes until golden. Remove muffins from pan. Cool on rack. Makes 24 muffins.
