MARINATED CARROTS 
1 bunch carrots
2 cloves garlic
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. olive oil
2 tbsp. wine vinegar
1 tsp. oregano

Boil carrots until tender. Place in bowl with remaining ingredients and marinate for 12 hours. Serve at room temperature. Yield: 8 servings.
