PUMPKIN ICE CREAM PIE 
1/2 gallon vanilla ice cream
1 c. pumpkin
1 1/4 c. sugar
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1/4 tsp. ginger
1 tsp. vanilla
1 c. whipping cream (stiffly whipped)

Prepare graham cracker crust as follows:

1 1/4 c. graham crackers
1/4 c. sugar
1/4 c. melted butter

Mix and press into pan. Refrigerate.

Slice ice cream into 1 inch thick slabs. Place into pan over crust - smooth with spoon. Mix all other ingredients and smooth over top. Sprinkle a few more graham cracker crumbs on top. Place in freezer until ready to serve. Makes 1 (9 x 13 inch) dessert.
