SWEET POTATO DELIGHT 
10 lg. yams or sweet potatoes
1 stick butter
1/2 c. brown sugar
1 c. sugar
1 egg
1 (20 oz.) can crushed pineapple
2 tsp. nutmeg
2 tsp. cinnamon
1 c. miniature marshmallows

Boil potatoes until soft. Peel and mash while still hot. Add butter, sugars and egg. Mix well; add nutmeg and cinnamon. Dump can of drained crushed pineapple into mix and add 2 tablespoons of pineapple juice from reserve. Mix well.

Pour mixture into buttered baking dish. Bake at 350 degrees for 1 hour or until lightly browned. Sprinkle marshmallows over the top and return to oven for 10 minutes.
