CHOW CHOW 
1 qt. chopped cabbage (sm. head)
3 c. chopped cauliflower (med. head)
2 c. chopped onions
2 c. chopped green tomatoes (4 med.)
1 c. chopped red tomatoes
2 c. chopped sweet bell green peppers
1 c. chopped sweet bell red peppers
4 c. chopped hot peppers (red and green)
3 tbsp. salt
2 1/2 c. vinegar
1 1/2 c. sugar
2 tsp. dry mustard
1 tsp. turmeric
1/2 tsp. ground ginger
1 tsp. mustard seed

Combine chopped vegetables; sprinkle with salt. Let stand 4 to 6 hours in a cool place. Drain well. Combine vinegar, sugar, and spices; simmer 10 minutes, then bring to boiling. Pack boiling hot into hot jars, leaving 1/8 inch head space. Adjust caps. Process 10 minutes.
