DELICIOUS BRAN MUFFINS | |
3 c. Bran Buds (cereal) 1 c. boiling water 1 tsp. salt 2 eggs 1 1/2 c. sugar 1/2 c. oil 2 1/2 c. flour 1 pt. buttermilk 2 1/2 tsp. baking soda 1 tsp. cinnamon 1/2 box raisins Or 1 pint regular milk with 1 teaspoon vinegar added. Mix 1 cup buds and 1 cup boiling water and set aside. Mix rest of ingredients and other 2 cups buds. Then add other buds (hot). Mix in big bowl. Fill baking cups 2/3 full. Bake at 375 degrees for 20 minutes. Batter keeps 6 weeks in refrigerator. Makes 3-3 1/2 dozen. |
